Spiced Peaches

I was searching for a great side dish to go with ham as we were all a little tired of the standard green beans, scalloped potatoes, etc.  I stumbled across this little gem, tried it and we are in LOVE!  This is so simple to put together, makes the house smell unbelievable while simmering and could be a fantastic housewarming/homemade gift!  



Spiced Peaches - recipe from Nigella  

2 cans of peaches (in heavy syrup)
1 tbs rice wine vinegar
2 cinnamon sticks
1.5 - 2 inch fresh ginger, peeled and sliced into rounds
1/2 tsp red pepper flakes
1/2 tsp kosher salt
3 whole cloves

Place all ingredients into a saucepan and bring to a low bowl.  Let bubble for a few minutes and then reduce heat.  Simmer until ready to serve.  The longer the low simmer the more infused the flavors will be.

The spiced peaches can also be placed in decorative jars for gifts BUT they do not have a long shelf life so be sure to let the recipient know.
